I had some light white bean vegetable soup that was getting a bit thin - I ate the thickest parts of it already, it was too good a starter for my yesterdays chicken and salad dinner - grilled chicken legs with cooked potatoes and lettuce and feta salad…
I fried some bacon - I cut and fried its fattest parts into cracklings and then fried a few more slices in the fat. Then I put all the bacon into a bowl and fried two diced onions in the bacon’s fat, then put them also to the bowl onto the bacon. In the meanwhile I cooked a few potatoes, then mashed them and fried, too, on the remaining fat.
I heated the soup, added mixed herbs and poured it over the bacon and onions, then put the potatoes in.
In this way I had a delicious and nutritious dinner today.
And - no photos, just preparing and eating - simplicity.
